  • 1 lb lean ground beef (or turkey/chicken)
  • 1½ cups cooked rice
  • 1 small onion (diced)
  • 1 cup black beans (drained and rinsed)
  • 1 cup frozen corn
  • 2½ cups shredded cheese (sharp cheddar and Monterey Jack)
  • 6 large bell peppers
  • Spices: chili powder, smoked paprika, ground cumin, garlic powder, salt, black pepper

Instructions

  1. Cook rice according to package directions; set aside.
  2. Preheat oven to 375°F and lightly grease a 9×13-inch baking dish.
  3. Cut tops off bell peppers, remove seeds, and place upright in the dish. Season inside with salt, pepper, and chili powder.
  4. In a skillet over medium-high heat, cook ground beef with diced onion until browned. Stir in spices and mix well.
  5. Add corn, black beans, cooked rice, and half of the shredded cheese; combine thoroughly.
  6. Spoon the filling into each pepper; top with remaining cheese.
  7. Bake uncovered for 30–35 minutes until peppers are tender.
