  • 3 cloves garlic, minced

  • 3 cups fresh spinach, roughly chopped

  • 1 block (8 oz) cream cheese, softened

  • ½ cup sour cream

  • ½ cup chicken broth

  • 1 tsp onion powder

  • ½ tsp garlic powder

  • ½ tsp salt

  • ¼ tsp black pepper

  • 1 cup shredded mozzarella cheese (plus extra for topping)

  • ¼ cup grated Parmesan cheese

Optional for Topping:

  • Extra mozzarella or cheddar

  • Chopped parsley or green onions

  • Crushed red pepper flakes for a kick


Instructions

Step 1: Preheat and Prep

  1. Preheat your oven to 375°F (190°C).

  2. Lightly grease a 9×13-inch baking dish.

Step 2: Sauté the Spinach

  1. Heat olive oil in a skillet over medium heat.

  2. Add garlic and sauté for 30 seconds until fragrant.

  3. Add chopped spinach and cook for 2–3 minutes until wilted.

  4. Remove from heat and set aside.

Step 3: Make the Creamy Sauce

  1. In a mixing bowl, beat together cream cheese, sour cream, and chicken broth until smooth.

  2. Stir in onion powder, garlic powder, salt, and pepper.

  3. Mix in shredded chicken, cooked spinach, mozzarella, and Parmesan cheese.

Step 4: Assemble the Casserole

  1. Pour the chicken and cream cheese mixture into the prepared baking dish.

  2. Spread evenly and sprinkle with additional mozzarella cheese on top.

Step 5: Bake

  1. Bake uncovered for 25–30 minutes, or until the casserole is hot and bubbly.

  2. For a golden top, broil for the last 2–3 minutes, watching closely.

Step 6: Garnish and Serve

  1. Let cool for 5 minutes before serving.
