For the Chicken & Marinade:
- 2 boneless, skinless chicken breasts, thinly sliced
- 1 tablespoon soy sauce
- 1 teaspoon cornstarch
- ½ teaspoon sesame oil
For the Chow Mein Sauce:
- 3 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon hoisin sauce
- 1 teaspoon sugar
- ½ teaspoon sesame oil
- ¼ teaspoon white or black pepper
- ¼ cup chicken broth or water
For the Stir-Fry:
- 8 oz chow mein noodles (or substitute thin egg noodles or spaghetti)
- 2 tablespoons vegetable oil
- 3 cloves garlic, minced
- 1 teaspoon ginger, minced
- 1 cup cabbage, shredded
- ½ cup carrots, julienned
- ½ cup bell pepper, thinly sliced
- ½ cup bean sprouts (optional)
- 3 green onions, sliced
- 1 teaspoon sesame seeds (for garnish, optional)
Instructions
Step 1: Cook the Noodles
- Bring a pot of water to a boil and cook the chow mein noodles according to package instructions. Drain, rinse with cold water, and toss with 1 teaspoon oil to prevent sticking.
Step 2: Marinate the Chicken
- In a bowl, mix sliced chicken with soy sauce, cornstarch, and sesame oil. Let it marinate while prepping the veggies.
Step 3: Make the Sauce
- In a small bowl, whisk together soy sauce, oyster sauce, hoisin sauce, sugar, sesame oil, pepper, and chicken broth. Set aside.
Step 4: Stir-Fry the Chicken
- Heat 1 tablespoon oil in a large pan or wok over medium-high heat.
- Add the marinated chicken and stir-fry for 4-5 minutes, until cooked through. Remove from the pan and set aside.
Step 5: Stir-Fry the Vegetables
- In the same pan, add another 1 tablespoon oil.
- Sauté garlic and ginger for 30 seconds, until fragrant.
- Add cabbage, carrots, bell pepper, and bean sprouts. Stir-fry for 2-3 minutes, until slightly softened but still crisp.
Step 6: Combine Everything
- Return the chicken to the pan.
- Add the cooked noodles and pour in the chow mein sauce.
- Toss everything together and cook for 2-3 minutes, ensuring the noodles are coated in sauce.
- Stir in the green onions and remove from heat.
Step 7: Serve & Enjoy!
- Garnish with sesame seeds (if using) and serve hot.
Notes
- Use fresh chow mein noodles for the best texture. If unavailable, substitute with thin egg noodles or spaghetti.
- Cook on high heat to get that classic stir-fry flavor!
- Prep everything ahead of time—stir-frying happens fast!
- For extra crunch, add water chestnuts or cashews.
