Ingredients

Scale

For the Chicken & Marinade:

  • 2 boneless, skinless chicken breasts, thinly sliced
  • 1 tablespoon soy sauce
  • 1 teaspoon cornstarch
  • ½ teaspoon sesame oil

For the Chow Mein Sauce:

  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon hoisin sauce
  • 1 teaspoon sugar
  • ½ teaspoon sesame oil
  • ¼ teaspoon white or black pepper
  • ¼ cup chicken broth or water

For the Stir-Fry:

  • 8 oz chow mein noodles (or substitute thin egg noodles or spaghetti)
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 1 cup cabbage, shredded
  • ½ cup carrots, julienned
  • ½ cup bell pepper, thinly sliced
  • ½ cup bean sprouts (optional)
  • 3 green onions, sliced
  • 1 teaspoon sesame seeds (for garnish, optional)

Instructions

Step 1: Cook the Noodles

  1. Bring a pot of water to a boil and cook the chow mein noodles according to package instructions. Drain, rinse with cold water, and toss with 1 teaspoon oil to prevent sticking.

Step 2: Marinate the Chicken

  1. In a bowl, mix sliced chicken with soy sauce, cornstarch, and sesame oil. Let it marinate while prepping the veggies.

Step 3: Make the Sauce

  1. In a small bowl, whisk together soy sauce, oyster sauce, hoisin sauce, sugar, sesame oil, pepper, and chicken broth. Set aside.

Step 4: Stir-Fry the Chicken

  1. Heat 1 tablespoon oil in a large pan or wok over medium-high heat.
  2. Add the marinated chicken and stir-fry for 4-5 minutes, until cooked through. Remove from the pan and set aside.

Step 5: Stir-Fry the Vegetables

  1. In the same pan, add another 1 tablespoon oil.
  2. Sauté garlic and ginger for 30 seconds, until fragrant.
  3. Add cabbage, carrots, bell pepper, and bean sprouts. Stir-fry for 2-3 minutes, until slightly softened but still crisp.

Step 6: Combine Everything

  1. Return the chicken to the pan.
  2. Add the cooked noodles and pour in the chow mein sauce.
  3. Toss everything together and cook for 2-3 minutes, ensuring the noodles are coated in sauce.
  4. Stir in the green onions and remove from heat.

Step 7: Serve & Enjoy!

  1. Garnish with sesame seeds (if using) and serve hot.
