  • 8 oz pappardelle (or another long pasta)
  • 2 tablespoons unsalted butter
  • 1 medium shallot, finely chopped
  • 1 lb chicken liver, cut into bite-sized pieces
  • 2 large garlic cloves, finely chopped
  • Fresh thyme and rosemary
  • 1 oz dried porcini mushrooms, rehydrated
  • 1/3 cup dry white grape juice
  • 1 tablespoon double-concentrated tomato paste
  • 1/3 cup grated Parmesan
  • Salt and freshly ground black pepper

Instructions

  1. Cook the pappardelle according to package instructions until al dente. Drain and reserve ½ cup of pasta water.
  2. In a large skillet over medium heat, melt the butter and sauté the shallots for 3-4 minutes until softened.
  3. Add the chicken livers to the skillet and cook for about 5-7 minutes until browned and cooked through.
  4. Stir in garlic, thyme, and rosemary; cook for an additional minute until fragrant.
  5. Add rehydrated porcini mushrooms; cook for another minute.
  6. Pour in the grape juice while scraping up browned bits; add tomato paste and simmer for about 2-3 minutes until reduced.
  7. Mix in reserved pasta water, then add cooked pappardelle and grated Parmesan cheese.
  8. Adjust sauce consistency as needed with more reserved pasta water; season with salt and pepper to taste.
  9. Serve immediately, garnished with extra Parmesan and parsley.
