- 2 cups broccoli florets
- 1/2 yellow bell pepper (cut into 1 inch pieces)
- 1/2 red bell pepper (cut into 1 inch pieces)
- 1/2 cup baby carrots (sliced)
- 2 tsp minced ginger
- 2 garlic cloves (minced)
- 1 tbsp corn starch
- 2 tbsp cold water
- 1/4 cup low sodium chicken broth
- 3 tbsp low sodium soy sauce
- 1/4 cup honey
- 1 tbsp toasted sesame oil
- 1/2 tsp crushed red pepper flakes
Instructions
- Cut the chicken breast into cubes and chop all vegetables.
- Season cubed chicken with salt and pepper in a bowl.
- Heat 1 tablespoon of olive oil in a wok or large skillet over medium-high heat; add seasoned chicken.
- Cook for about 5–7 minutes until browned; remove from pan and set aside.
- Add another tablespoon of olive oil if needed, then sauté broccoli, bell peppers, and carrots for about 3–4 minutes until tender yet crisp.
- Stir in minced garlic and ginger; cook for an additional minute.
- In a small bowl, mix corn starch with cold water until smooth; add broth, soy sauce, honey, sesame oil, and red pepper flakes to combine.
- Return cooked chicken to the pan; pour sauce mixture over everything and stir well.
- Cook for an additional 2–3 minutes until the sauce thickens slightly.
- Serve hot over rice or noodles.
