Ingredients
For the Chicken & Marinade:

1 lb boneless skinless chicken breast or thighs, sliced thin

2 tbsp soy sauce

1 tbsp cornstarch
-
1 tsp sesame oil
For the Teriyaki Sauce:

¼ cup soy sauce
-
2 tbsp honey or brown sugar
-
2 tbsp rice vinegar
-
1 tbsp sesame oil
-
1 tbsp cornstarch
-
1 tsp fresh ginger, grated

2 cloves garlic, minced
-
½ cup water
For the Noodles & Veggies:

8 oz noodles (lo mein, spaghetti, or rice noodles)

1 tbsp vegetable oil
-
1 cup broccoli florets
-
1 bell pepper, thinly sliced

1 carrot, julienned
-
2 green onions, chopped
For Garnish:

Sesame seeds
-
Extra green onions
-
Lime wedges (optional)
Instructions
Step 1: Marinate the Chicken

In a bowl, combine chicken slices with soy sauce, cornstarch, and sesame oil.

Toss well and set aside to marinate while preparing other ingredients.
Step 2: Cook the Noodles
3. Bring a large pot of water to a boil.
4. Cook noodles according to package directions. Drain and set aside.
Step 3: Make the Teriyaki Sauce
5. In a small bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, cornstarch, ginger, garlic, and water.
6. Set aside until ready to use.
Step 4: Stir-Fry the Chicken & Veggies
7. Heat vegetable oil in a large skillet or wok over medium-high heat.
8. Add marinated chicken and cook for 5-6 minutes until browned and cooked through. Remove and set aside.
9. In the same pan, stir-fry broccoli, bell pepper, and carrot for 3-4 minutes until just tender.
Step 5: Combine Everything
10. Return the chicken to the skillet with the vegetables.
11. Add the cooked noodles and pour in the teriyaki sauce.
12. Toss everything together and cook for 2-3 minutes until the sauce thickens and coats the noodles.
Step 6: Garnish & Serve
13. Remove from heat and sprinkle with sesame seeds and chopped green onions.
14. Serve immediately with lime wedges if desired.
