  • 4 oz cream cheese
  • 1 cup baby spinach leaves (roughly chopped)
  • 1/2 cup sundried tomatoes in olive oil with herbs
  • 1 cup grated mozzarella cheese
  • 2 tablespoons olive oil
  • 1 cup grape tomatoes (halved)
  • Kosher salt and black pepper

Instructions

  1. Brine the chicken by dissolving kosher salt in water and soaking the chicken breasts for at least 30 minutes.
  2. Preheat your oven to 400°F (200°C). Pat dry the chicken, creating pockets by slicing into each breast.
  3. Stuff each pocket with cream cheese, spinach, sundried tomatoes, and mozzarella.
  4. Secure the openings with toothpicks and season both sides with black pepper and coarse sea salt.
  5. Heat olive oil in a skillet over medium-high heat, searing each stuffed chicken until browned on both sides.
  6. Place halved grape tomatoes over the chicken in the skillet and transfer to the oven for 10-15 minutes until cooked through.
