For the Cookie Dough:

  • ½ cup (115 g) unsalted butter, softened

  • ½ cup (100 g) brown sugar

  • ¼ cup (50 g) granulated sugar

  • 1 large egg

  • 1 tsp vanilla extract

  • 1¼ cups (160 g) all-purpose flour

  • ½ tsp baking soda

  • ¼ tsp salt

  • 1 cup (170 g) semi-sweet chocolate chips

For the Cheesecake Filling:

  • 8 oz (225 g) cream cheese, softened

  • ⅓ cup (65 g) granulated sugar

  • 1 large egg

  • ½ tsp vanilla extract


Instructions

Step 1: Preheat and Prepare Pan

  1. Preheat oven to 175°C (350°F).

  2. Line an 8×8 inch baking pan with parchment paper, leaving some overhang for easy removal.

Step 2: Make the Cookie Dough

  1. In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.

  2. Add egg and vanilla; mix until combined.

  3. In a separate bowl, whisk together flour, baking soda, and salt.

  4. Gradually mix dry ingredients into the butter mixture.

  5. Stir in the chocolate chips.

Step 3: Make the Cheesecake Layer

  1. In another bowl, beat cream cheese until smooth.

  2. Add sugar, egg, and vanilla; beat until creamy and well blended.

Step 4: Assemble the Bars

  1. Press half of the cookie dough evenly into the bottom of the prepared pan.

  2. Pour the cheesecake mixture over the dough and spread evenly.

  3. Drop spoonfuls of the remaining cookie dough over the cheesecake layer.

  4. Gently spread or flatten the dough as best as possible—it’s okay if some cheesecake peeks through.

Step 5: Bake

  1. Bake for 30–35 minutes, or until the top is golden and the center is mostly set.

  2. Cool completely in the pan, then chill in the fridge for at least 2 hours before slicing.

Step 6: Slice and Serve

  1. Use the parchment paper to lift the bars from the pan.

  2. Slice into 12–16 squares, depending on size preference.

  3. Serve chilled or at room temperature.
