Ingredients

For the Pancakes:
1 ½ cups all-purpose flour
2 tbsp brown sugar (light or dark)
1 tbsp granulated sugar
2 tsp baking powder
½ tsp baking soda
1 tsp ground cinnamon
¼ tsp salt
1 cup buttermilk (or milk + 1 tbsp vinegar)
2 large eggs
2 tbsp melted butter (plus more for greasing)
1 tsp vanilla extract

Optional Toppings:
Maple syrup
Whipped cream
Sliced bananas or apples
Chopped pecans or walnuts
Dusting of powdered sugar


Instructions

Step 1: Mix the Dry Ingredients
In a large bowl, whisk together the flour, brown sugar, granulated sugar, baking powder, baking soda, cinnamon, and salt.

Step 2: Mix the Wet Ingredients
In a separate bowl, whisk the buttermilk, eggs, melted butter, and vanilla extract until smooth.

Step 3: Combine
Pour the wet ingredients into the dry ingredients and stir until just combined.
Do not overmix—some lumps are okay and will help create fluffy pancakes.

Step 4: Cook the Pancakes
Heat a griddle or non-stick skillet over medium heat and grease lightly with butter.
Scoop ¼ cup of batter onto the hot surface for each pancake.
Cook for 2-3 minutes or until bubbles form and the edges begin to set.
Flip and cook for another 1-2 minutes until golden and cooked through.
Transfer to a plate and keep warm. Repeat with remaining batter.

Step 5: Serve & Enjoy
Stack pancakes and top with your favorite additions like maple syrup, whipped cream, fruit, or a sprinkle of cinnamon sugar.

Notes

Use Buttermilk – Adds tang and helps with fluffy texture.
Don’t Overmix – Stir just enough to combine; overmixing makes tough pancakes.
Cook on Medium Heat – Too hot, and they’ll burn on the outside while staying raw inside.
Use a Non-Stick Skillet – Ensures easy flipping and perfect browning.
Let the Batter Rest – Letting it sit for 5-10 minutes before cooking improves texture.
