For the Roasted Sweet Potatoes:

  • 4 cups sweet potatoes, peeled and diced into 1-inch cubes

  • 2 tbsp olive oil or melted coconut oil

  • ¼ cup pure maple syrup

  • 1 tsp ground cinnamon

  • ¼ tsp ground nutmeg (optional)

  • ½ tsp salt

  • ¼ tsp black pepper

Optional Toppings:

  • 2 tbsp chopped pecans or walnuts

  • 1 tsp fresh thyme or rosemary leaves

  • 1 tbsp dried cranberries or raisins


Instructions

Step 1: Preheat the Oven
Preheat your oven to 400°F (200°C).
Line a large baking sheet with parchment paper or lightly grease with oil.

Step 2: Prepare the Sweet Potatoes
Peel and dice the sweet potatoes into 1-inch cubes for even cooking.
Place them in a large bowl.

Step 3: Season the Potatoes
Add olive oil, maple syrup, cinnamon, nutmeg (if using), salt, and black pepper to the bowl.
Toss everything together until the sweet potato cubes are well coated.

Step 4: Arrange on the Baking Sheet
Spread the sweet potatoes in a single layer on the prepared baking sheet.
Make sure the pieces aren’t overcrowded for proper roasting.

Step 5: Roast to Perfection
Bake for 25–30 minutes, flipping halfway through, until sweet potatoes are tender inside and golden on the edges.
Roasting time may vary slightly depending on your oven and the size of the cubes.

Step 6: Add Optional Toppings
In the last 5 minutes of baking, sprinkle chopped pecans on top for added crunch.
Once baked, you can also add fresh herbs or dried cranberries for a festive twist.

Step 7: Serve Warm
Transfer to a serving dish and enjoy immediately while warm and sticky.
