  • 4 large eggs

  • 1 cup buttermilk
  • 1 teaspoon coconut extract
  • 1/2 cup butter (softened)
  • 8 ounces block cream cheese (softened)
  • 1 teaspoon coconut extract
  • 2 pounds powdered sugar (one bag)
  • Milk (as needed)
  • Toasted Coconut

Instructions

  1. Preheat oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a mixing bowl, beat softened butter and sugar until fluffy. Add cream of coconut and mix well, then incorporate eggs one by one.
  3. In another bowl, whisk flour, baking powder, baking soda, and salt. Gradually add dry ingredients to the wet mixture alternating with buttermilk. Stir in coconut extract.
  4. Divide batter evenly between prepared pans and bake for about 60 minutes or until a toothpick comes out clean. Cool in pans for 10 minutes before transferring to wire racks.
  5. For the frosting, beat softened butter and cream cheese until smooth; mix in coconut extract and powdered sugar until desired consistency is reached.
  6. Frost cooled cakes and sprinkle toasted coconut on top.
