Instructions
Step 1: Preheat the Oven
- Preheat your oven to 350°F (175°C).
- Grease a 9×5-inch loaf pan with butter or non-stick spray.
Step 2: Mix the Dry Ingredients
- In a large bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.
Step 3: Mash and Mix the Wet Ingredients
- In another bowl, mash the bananas until smooth.
- Add the crushed pineapple, eggs, brown sugar, melted butter (or coconut oil), and vanilla extract. Stir until well combined.
Step 4: Combine Wet and Dry Ingredients
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Fold in the shredded coconut and chopped nuts (if using). Be careful not to overmix!
Step 5: Bake the Banana Bread
- Pour the batter into the greased loaf pan and smooth the top.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

- Slice into thick pieces and serve warm or at room temperature.

Notes
- Use Overripe Bananas: The riper the bananas, the sweeter and more flavorful the bread.
- Drain the Pineapple Well: Too much liquid can make the bread too dense.
- Don’t Overmix the Batter: Mix until just combined to keep the bread soft and tender.
- Make it Healthier: Swap out half the flour for whole wheat flour and use honey or maple syrup instead of sugar.
