Ingredients

  • 1 cup unsalted butter, softened

  • ⅔ cup powdered sugar

  • 1½ cups all-purpose flour

  • 2 tbsp cornstarch (for extra tenderness)

  • 1 tbsp instant coffee or espresso powder

  • 1 tsp hot water (to dissolve coffee)

  • ½ tsp vanilla extract

  • ¼ tsp salt

Optional Add-ins:

  • ½ cup mini chocolate chips

  • 1 tbsp cocoa powder for a mocha twist

  • A pinch of cinnamon for extra warmth


Instructions

Step 1: Dissolve the Coffee
In a small bowl, dissolve the instant coffee or espresso powder in 1 teaspoon of hot water.
Set aside to cool slightly.

Step 2: Cream the Butter and Sugar
In a large bowl, beat the softened butter and powdered sugar together until light and fluffy, about 2–3 minutes.

Step 3: Add Flavorings
Mix in the dissolved coffee and vanilla extract until fully combined.

Step 4: Add the Dry Ingredients
Sift together the flour, cornstarch, and salt.
Gradually add the dry ingredients to the butter mixture, mixing until just combined.
If adding chocolate chips or cocoa powder, stir them in now.

Step 5: Shape and Chill the Dough
Form the dough into a log about 2 inches in diameter, wrap it tightly in parchment paper or plastic wrap, and refrigerate for at least 1 hour or until firm.

Step 6: Preheat and Slice
Preheat your oven to 350°F (175°C).
Line a baking sheet with parchment paper.
Slice the chilled dough into ¼-inch thick rounds and place them about 1 inch apart on the baking sheet.

Step 7: Bake
Bake for 10–12 minutes, or until the edges are just starting to turn golden.
Let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Step 8: Serve
Serve with a hot cup of coffee, tea, or as an elegant dessert.

Notes

Use Good Instant Coffee – High-quality coffee powder gives the best flavor.
Don’t Overbake – Cookies should be pale with just a hint of golden color on the edges.
