Ingredients
For the French Toast:

6 slices thick-cut bread (brioche, challah, or Texas toast work best)

2 cups cornflakes, crushed slightly (not into powder)

3 large eggs

½ cup milk (whole or 2%)

2 tbsp heavy cream (optional for richness)

1 tsp vanilla extract

1 tsp ground cinnamon

2 tbsp sugar

2 tbsp butter (for cooking)

Instructions
Step 1: Prepare the Cornflakes
Place the cornflakes in a large shallow bowl and crush them slightly with your hands or the bottom of a glass.
You want small pieces, but not crumbs.
Step 2: Make the Egg Mixture
In another large shallow bowl, whisk together the eggs, milk, heavy cream (if using), vanilla extract, cinnamon, and sugar until well combined.
Step 3: Dip and Coat the Bread
Dip each slice of bread into the egg mixture, letting it soak for about 10 seconds on each side.
Allow the excess to drip off, then press both sides of the soaked bread into the crushed cornflakes, coating evenly.
Step 4: Cook the French Toast
Heat a frying pan or griddle over medium heat and melt 1 tablespoon of butter.
Cook the French toast slices for 2-3 minutes per side, or until golden brown and crispy.
Add more butter as needed for additional batches.
Step 5: Keep Warm (Optional)
If making a large batch, place cooked slices on a baking sheet in a 250°F (120°C) oven to keep warm while you finish the rest.
Step 6: Serve and Enjoy
