Ingredients

• 1 packet (2¼ tsp) active dry yeast
• ¼ cup warm water (110°F)
• 1 cup cottage cheese (room temperature)
• 2 tbsp honey or sugar
• 1 large egg (room temperature)
• 2 tbsp olive oil or melted butter
• 1½ tsp salt
• 2½–3 cups all-purpose or bread flour
• Optional: 2 tbsp ground flaxseed or oats for added texture
• Butter or oil for brushing top


Instructions

Step 1: Activate the Yeast
In a small bowl, combine the warm water and yeast.
Let it sit for 5–10 minutes until foamy. If it doesn’t foam, the yeast may be inactive.

Step 2: Mix Wet Ingredients
In a large bowl, whisk together cottage cheese, honey (or sugar), egg, olive oil, and salt until smooth.
Add the activated yeast mixture and stir to combine.

Step 3: Add the Flour
Gradually stir in the flour, ½ cup at a time, until a soft dough forms.
You may need slightly more or less depending on your cottage cheese’s moisture content.
The dough should be slightly sticky but pull away from the sides of the bowl.

Step 4: Knead the Dough
Turn the dough onto a floured surface and knead for 8–10 minutes, or use a stand mixer with a dough hook for 5–6 minutes, until the dough is smooth and elastic.

Step 5: First Rise
Place the dough in a lightly oiled bowl, cover with a towel or wrap, and let it rise in a warm place for 1 hour, or until doubled in size.

Step 6: Shape and Second Rise
Punch down the dough and shape it into a loaf.
Place in a greased 9×5-inch loaf pan.
Cover and let rise again for 30–45 minutes, until puffed and slightly domed.

Step 7: Bake the Bread
Preheat the oven to 350°F (175°C).
Bake for 30–35 minutes until the top is golden and the loaf sounds hollow when tapped.
Internal temp should read 190°F (88°C).

Step 8: Cool and Serve
Brush the top with butter or oil if desired.
Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Use Full-Fat Cottage Cheese – It adds richness and moisture.
Drain if Watery – If your cottage cheese is very wet, strain off excess liquid.
Room Temperature Ingredients – Help everything blend and rise better.
Don’t Overbake – Keeps the loaf soft and moist inside.
Customize It – Add herbs, shredded cheese, or seeds for extra flavor.
