  • 4 baking potatoes
  • 1 pound lean ground beef
  • ½ cup chopped onion
  • 1 garlic clove (minced)
  • Salt and pepper (to taste)
  • ¾ cup tomato paste
  • ¼ cup Worcestershire sauce
  • 1 ½ cups beef broth
  • 2 cups frozen mixed vegetables (thawed)
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat oven to 400°F. Bake potatoes for about an hour until tender.
  2. In a skillet over medium heat, cook ground beef, onion, garlic, salt, and pepper until meat is browned.
  3. Stir in tomato paste, Worcestershire sauce, beef broth, and mixed vegetables. Simmer until thickened; season to taste.
  4. Cut slits in baked potatoes and gently open them. Place in a baking dish.
  5. Fill each potato with the beef mixture and top with cheddar cheese.
  6. Return to the oven for an additional 5 minutes or broil for 2–3 minutes until cheese is melted.
