Ingredients
For the Skillet:

1 lb potatoes (Yukon gold or russet), diced small

2 tbsp olive oil or butter

½ lb beef breakfast sausage or turkey sausage

½ small onion, diced

1 small bell pepper, diced

4 large eggs
-
½ cup shredded cheddar cheese

Salt and pepper, to taste

½ tsp garlic powder
-
½ tsp paprika
-
Fresh parsley or green onions, for garnish
Instructions
Step 1: Cook the Potatoes
Heat 1 tbsp oil in a large skillet over medium heat.
Add diced potatoes and season with salt, pepper, garlic powder, and paprika.
Cook for 10–12 minutes, stirring occasionally, until potatoes are golden and tender.
Transfer potatoes to a plate and set aside.
Step 2: Cook the Sausage
In the same skillet, add the remaining 1 tbsp oil if needed.
Add sausage and cook, breaking it up with a spatula, until browned and fully cooked (about 5–6 minutes).
Add diced onion and bell pepper, and cook for another 3–4 minutes until softened.
Step 3: Return Potatoes to Skillet
Add the cooked potatoes back to the skillet.
Stir everything together and make 4 small wells in the mixture.
Step 4: Cook the Eggs
Crack one egg into each well.
Cover the skillet with a lid and cook for 3–5 minutes, or until the egg whites are set and yolks are cooked to your liking.
Alternatively, you can scramble the eggs separately and stir them in.
Step 5: Add Cheese & Garnish
Sprinkle shredded cheese evenly over the skillet.
Let it melt for 1–2 minutes before removing from heat.
Garnish with chopped parsley or green onions.
