- 1 large egg (for filling)
- 2 tablespoons granulated sugar (for filling)
- 2 tablespoons all-purpose flour (for filling)
Instructions
- Preheat your oven to 350°F and grease a 9×5-inch loaf pan or line it with parchment paper.
- In a large bowl, mix together the pumpkin puree, granulated sugar, brown sugar, eggs, milk, and vegetable oil until well combined.
- Gradually add the flour, pumpkin pie spice, baking soda, baking powder, and salt to the mixture; stir until just combined to avoid overmixing.
- In another bowl, beat the cream cheese until smooth. Then add one egg, additional granulated sugar, and flour; mix until fully combined.
- Pour half of the pumpkin batter into the prepared loaf pan. Spoon dollops of the cream cheese mixture over it and spread gently with an offset spatula. Top with the remaining pumpkin batter.
- Bake in the preheated oven for about 60–80 minutes or until a toothpick inserted in the center comes out clean.
