Ingredients
For the Main Dish:
1 lb ground beef
1 tbsp olive oil
1 small onion, diced
3 cloves garlic, minced
8 oz mushrooms, sliced (white or cremini)
1 tsp salt
½ tsp black pepper
1 tsp Italian seasoning
¼ tsp crushed red pepper flakes (optional)
For the Sauce and Pasta:
1 tbsp all-purpose flour
1½ cups beef broth
1 cup heavy cream (or half-and-half for a lighter version)
1 package (20 oz) refrigerated cheese tortellini
½ cup grated Parmesan cheese
2 tbsp fresh parsley, chopped (for garnish)
Optional Additions:
1 cup baby spinach (stirred in at the end for added greens)
Extra shredded mozzarella or provolone for topping
Instructions
Step 1: Cook the Beef
Heat olive oil in a large skillet over medium-high heat.
Add ground beef and cook until browned, breaking it up as it cooks.
Once browned, remove excess grease if needed, and push meat to the side.
Step 2: Sauté Aromatics and Mushrooms
Add diced onion to the same skillet and cook for 2-3 minutes until softened.
Add mushrooms and cook for another 4-5 minutes until tender and browned.
Stir in garlic, salt, pepper, Italian seasoning, and red pepper flakes.
Mix with the cooked beef and continue to cook for 1-2 minutes.
Step 3: Build the Sauce
Sprinkle flour over the mixture and stir to coat.
Slowly pour in beef broth while stirring, scraping any bits off the bottom.
Add heavy cream and bring to a simmer.
Stir in cheese tortellini and ensure they’re submerged in the sauce.
Step 4: Simmer and Finish
Cover and cook for 6-8 minutes, stirring occasionally, until tortellini are tender.
Remove lid, stir in Parmesan cheese, and let sauce thicken slightly.
If using spinach, stir it in now until wilted.
Taste and adjust seasoning if needed.
Step 5: Garnish and Serve
Turn off heat and sprinkle with fresh parsley.
Top with extra cheese if desired.
