Ingredients
-
4 large eggs
-
2 tbsp milk or cream (optional, for extra softness)
-
2 tbsp Boursin cheese (Garlic & Fine Herbs or preferred flavor)
-
Salt and black pepper, to taste
-
1 tbsp butter or olive oil
-
Fresh chives or parsley, chopped (optional, for garnish)
-
Optional sides: sourdough toast, arugula salad, avocado slices
Instructions
Step 1: Whisk the Eggs
-
Crack the eggs into a bowl.
-
Add a pinch of salt, a little pepper, and the milk or cream if using.
-
Whisk until yolks and whites are fully blended and slightly frothy.
Step 2: Heat the Pan
-
Place a non-stick skillet over medium-low heat.
-
Add butter or olive oil and let it melt, tilting the pan to coat evenly.
Step 3: Cook the Eggs Slowly
-
Pour the whisked eggs into the pan.
-
Let them sit undisturbed for about 10 seconds, then gently stir with a rubber spatula.
-
Continue to stir slowly, scraping the bottom and edges to form soft curds.
-
When eggs are mostly set but still glossy and slightly runny, remove from heat.
Step 4: Stir in the Boursin
-
Immediately add Boursin cheese to the warm eggs.
-
Gently fold it in until melted and creamy.
-
Taste and adjust seasoning if needed.
Step 5: Plate & Garnish
-
Serve the scrambled eggs right away, warm and silky.
-
Garnish with chopped chives or parsley.
-
Pair with toast, salad, or smoked salmon for a complete meal.
Notes
Use Low Heat – This prevents overcooking and keeps the eggs creamy.
Don’t Over-Stir – Stir just enough to create soft folds.
Add Cheese at the End – This preserves its creamy texture and flavor.
Use a Non-Stick Pan – Essential for soft, delicate eggs.
Serve Immediately – Scrambled eggs continue to cook from residual heat.
