  • 2 large chicken breasts, cubed
  • 1/2 cup flour
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 2 tbsp minced garlic
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup Parmesan cheese
  • 1/3 cup chopped sun-dried tomatoes
  • 1 pack of gnocchi

Instructions

  1. In a bowl, combine flour, salt, pepper, paprika, and garlic powder. Dredge the cubed chicken in the mixture until well-coated.
  2. Heat olive oil and butter in a skillet over medium-high heat. Cook the dredged chicken for about 4-5 minutes per side until golden brown and fully cooked (165°F), then set aside.
  3. In the same skillet, sauté minced garlic until fragrant. Stir in chicken broth and heavy cream, gradually adding Parmesan cheese until melted into a smooth sauce.
  4. Mix in sun-dried tomatoes along with oregano and thyme, allowing it to simmer on medium-low heat.
  5. Add gnocchi to the skillet and cook covered for about 2-3 minutes or until tender.
  6. Return the cooked chicken back into the skillet, mix gently, and serve warm.
