  • 10 oz dried egg noodles
  • 1 lb boneless skinless chicken breasts (cut into pieces)
  • 1 medium yellow onion (diced)
  • 2 stalks celery (diced)
  • 4 cloves garlic (minced)
  • 1012 oz frozen peas and carrots
  • 2 cups reduced sodium chicken broth
  • 1 cup heavy whipping cream
  • Olive oil, butter, and seasonings (Italian seasoning, salt, pepper, etc.)

Instructions

  1. Cook the egg noodles in boiling water until al dente. Drain and set aside.
  2. In a skillet, heat olive oil over medium heat. Add chicken pieces seasoned with Italian seasoning and salt, cooking until browned.
  3. In the same skillet, melt butter and sauté onion, celery, and garlic until softened. Add frozen peas, carrots, and corn.
  4. Sprinkle flour over the vegetables and stir well. Gradually add chicken broth while stirring to avoid lumps; bring to a simmer.
  5. Stir in heavy cream along with seasonings until combined.
  6. Mix cooked noodles and sautéed chicken into the sauce until well coated.
