- 4 strips turkey turkey bacon
- 1/2 medium onion (chopped small)
- 3 sticks celery (chopped small)
- 2 medium carrots (peeled & chopped small)
- 2 cloves garlic (minced)
- 1/4 cup flour
- 4 cups chicken broth
- 1 cup heavy cream
- 4 cups frozen or fresh corn
- 2 large Russet potatoes (peeled & diced)
- 1/4 teaspoon Italian seasoning
- Salt & pepper to taste
Instructions
- In a large pot over medium-high heat, cook the turkey turkey bacon until crispy, about 10 minutes. Remove and drain on paper towels.
- In the same pot, add chopped onion, celery, and carrots; sauté for about 5 minutes until softened.
- Stir in minced garlic and cook for about 30 seconds. Add flour and stir continuously for one minute.
- Gradually pour in chicken broth while stirring to dissolve the flour completely.
- Add heavy cream, corn, diced potatoes, Italian seasoning, and most of the cooked turkey turkey bacon back into the pot. Bring to a boil then reduce to a simmer with lid slightly ajar.
- Cook until potatoes are tender, about 15-20 minutes. Stir occasionally.
- Season with salt and pepper as needed before serving. Garnish with remaining turkey turkey bacon.
