Ingredients
Scale
- 12 oz fettuccine pasta – The perfect noodle for holding creamy sauce.
- 2 tablespoons olive oil – For cooking the sausages.
- 4 beef sausages, sliced – Adds hearty, smoky flavor.
- 3 tablespoons unsalted butter – For a rich, velvety sauce.
- 4 cloves garlic, minced – A must for that bold, garlicky kick.
- 1 ½ cups heavy cream – The base for the luscious sauce.
- 1 cup grated Parmesan cheese – For that classic, cheesy flavor.
- ½ teaspoon salt – Enhances all the flavors.
- ½ teaspoon black pepper – Adds a hint of warmth.
- ½ teaspoon Italian seasoning – Optional, but adds extra depth.
- ½ cup pasta water – Helps make the sauce silky and smooth.
- Fresh parsley, chopped – For garnish and freshness.
Instructions
Step 1: Cook the Pasta
- Bring a large pot of salted water to a boil.
- Cook the fettuccine according to package instructions until al dente.
- Reserve ½ cup of pasta water, then drain and set aside.
Step 2: Cook the Beef Sausages
- Heat 2 tablespoons of olive oil in a large skillet over medium heat.
- Add the sliced beef sausages and cook for 5-7 minutes until browned. Remove and set aside.
Step 3: Make the Creamy Garlic Parmesan Sauce
- In the same skillet, melt 3 tablespoons of butter over medium heat.
- Add minced garlic and sauté for 1 minute until fragrant.
- Pour in the heavy cream and stir well. Simmer for 2 minutes.
- Add the grated Parmesan cheese, salt, black pepper, and Italian seasoning. Stir until the cheese melts and the sauce is smooth.
Step 4: Combine Everything
- Add the cooked fettuccine to the sauce, tossing to coat.
- Pour in a little reserved pasta water to loosen the sauce if needed.
- Return the beef sausages to the pan and mix everything together.
Step 5: Serve & Enjoy
- Remove from heat and garnish with fresh parsley.
- Serve hot with extra Parmesan on top.
Notes
- Don’t Overcook the Pasta – Al dente pasta holds up best in the sauce.
- Use Freshly Grated Parmesan – It melts better and tastes richer.
- Save Pasta Water – It helps make the sauce extra creamy and smooth.
- Adjust the Thickness – If the sauce is too thick, add a bit more pasta water.
