For the Noodles & Peas:

  • 1½ cups frozen green peas

  • Salt (for pasta water)

For the Creamy Sauce:

  • 2 tbsp unsalted butter

  • 2 tbsp all-purpose flour

  • 2 cups milk (whole or 2% for best creaminess)

  • ½ cup vegetable broth (adds depth)

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • ¼ tsp ground black pepper

  • ½ tsp salt (adjust to taste)

  • ½ cup grated Parmesan cheese (plus more for topping)

  • ¼ cup sour cream or plain Greek yogurt (for tangy richness)

Optional Add-ins & Garnishes:

  • 2 tbsp fresh parsley, chopped

  • 1 tsp crushed red pepper flakes (for a spicy kick)

  • Lemon zest or a splash of lemon juice (for brightness)


Instructions

Step 1: Cook the Noodles and Peas

  1. Fill a large pot with water, add a generous pinch of salt, and bring to a boil.

  2. Add egg noodles and cook according to package instructions.

  3. During the last 2 minutes of cooking, stir in the frozen peas.

  4. Once noodles are tender and peas are bright green, drain and set aside.

Step 2: Make the Creamy Sauce

  1. In a medium saucepan, melt the butter over medium heat.

  2. Add the flour and whisk constantly for 1 minute to create a smooth roux.

  3. Slowly pour in the milk, whisking continuously to avoid lumps.

  4. Add vegetable broth and continue whisking until the sauce begins to thicken, about 4-5 minutes.

  5. Stir in garlic powder, onion powder, salt, and pepper.

  6. Once the sauce has thickened, reduce heat to low and stir in Parmesan cheese until melted.

  7. Add sour cream (or Greek yogurt) and stir until smooth and creamy.

Step 3: Combine and Serve

  1. Add the drained noodles and peas into the sauce.

  2. Toss gently to coat everything evenly with the creamy mixture.

  3. Taste and adjust seasoning if needed—add a little more salt, pepper, or cheese if desired.

  4. Serve hot, garnished with fresh parsley, extra Parmesan, and red pepper flakes if using.

Don’t Overcook the Pasta – Slightly undercook noodles so they stay firm when mixed with the sauce.
