  • 2 pounds chicken tenderloins
  • 1/2 medium onion, diced
  • 3 garlic cloves, minced
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 2 teaspoons dried Italian seasoning
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup sliced roasted red peppers
  • 1/2 cup sliced pepperoncini peppers

Instructions

  1. Heat butter and olive oil in a large cast iron skillet over medium-high heat. Season the chicken with salt and pepper.
  2. Cook the chicken until golden brown on both sides; remove and set aside.
  3. In the same skillet, sauté the diced onion for about 3 minutes until softened, then add minced garlic and cook for another 2 minutes.
  4. Pour in chicken broth and reduce by half. Stir in heavy cream and Italian seasoning before returning the chicken to the skillet. Simmer until the chicken is cooked through.
  5. On medium-low heat, mix in Parmesan cheese, roasted red peppers, pepperoncini peppers, and red pepper flakes until cheese melts.
