For the Chicken

  • 4 boneless, skinless chicken breasts (or thighs)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • ½ teaspoon garlic powder
  • 2 tablespoons olive oil

For the Creamy Sauce

  • 2 tablespoons butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup mushrooms, sliced (optional)
  • 1 cup chicken broth
  • 1 cup heavy cream (or half-and-half)
  • ½ teaspoon dried thyme
  • ½ teaspoon salt (adjust to taste)
  • ¼ teaspoon black pepper
  • ½ cup shredded Parmesan cheese

For the Rice

  • 1 cup long-grain white rice
  • 2 cups chicken broth

Instructions

Step 1: Cook the Chicken

  1. Season the chicken breasts with salt, pepper, paprika, and garlic powder on both sides.
  2. Heat olive oil in a large skillet over medium heat.
  3. Sear the chicken for 4-5 minutes per side, until golden brown. Remove from the pan and set aside.

Step 2: Make the Creamy Sauce

  1. In the same skillet, melt butter and sauté onions and mushrooms for 3 minutes, until softened.
  2. Add garlic and cook for 30 seconds until fragrant.
  3. Pour in chicken broth, heavy cream, thyme, salt, and black pepper. Stir well and let it simmer for 2 minutes.
  4. Stir in Parmesan cheese and let it melt into the sauce.

Step 3: Cook the Rice

  1. Stir uncooked rice into the sauce, making sure it is evenly distributed.
  2. Pour in chicken broth, then nestle the seared chicken back into the pan.
  3. Cover and reduce the heat to low. Let it simmer for 20-25 minutes, or until the rice is tender and the chicken is fully cooked.

Step 4: Serve and Enjoy

  1. Remove from heat and let the dish sit for 5 minutes before serving.
  2. Garnish with fresh parsley or extra Parmesan cheese, and serve warm.

Notes

  • Use chicken thighs for extra juiciness if preferred
  • Adjust the creaminess by adding more or less cream based on your preference
  • For extra flavor, add a splash of white wine before adding the cream
  • Use freshly grated Parmesan for the best taste and texture
