For the Chicken
- 4 boneless, skinless chicken breasts (or thighs)
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon paprika
- ½ teaspoon garlic powder
- 2 tablespoons olive oil
For the Creamy Sauce
- 2 tablespoons butter
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup mushrooms, sliced (optional)
- 1 cup chicken broth
- 1 cup heavy cream (or half-and-half)
- ½ teaspoon dried thyme
- ½ teaspoon salt (adjust to taste)
- ¼ teaspoon black pepper
- ½ cup shredded Parmesan cheese
For the Rice
- 1 cup long-grain white rice
- 2 cups chicken broth
Instructions
Step 1: Cook the Chicken
- Season the chicken breasts with salt, pepper, paprika, and garlic powder on both sides.
- Heat olive oil in a large skillet over medium heat.
- Sear the chicken for 4-5 minutes per side, until golden brown. Remove from the pan and set aside.
Step 2: Make the Creamy Sauce
- In the same skillet, melt butter and sauté onions and mushrooms for 3 minutes, until softened.
- Add garlic and cook for 30 seconds until fragrant.
- Pour in chicken broth, heavy cream, thyme, salt, and black pepper. Stir well and let it simmer for 2 minutes.
- Stir in Parmesan cheese and let it melt into the sauce.
Step 3: Cook the Rice
- Stir uncooked rice into the sauce, making sure it is evenly distributed.
- Pour in chicken broth, then nestle the seared chicken back into the pan.
- Cover and reduce the heat to low. Let it simmer for 20-25 minutes, or until the rice is tender and the chicken is fully cooked.
Step 4: Serve and Enjoy
- Remove from heat and let the dish sit for 5 minutes before serving.
- Garnish with fresh parsley or extra Parmesan cheese, and serve warm.
Notes
- Use chicken thighs for extra juiciness if preferred
- Adjust the creaminess by adding more or less cream based on your preference
- For extra flavor, add a splash of white wine before adding the cream
