Instructions
- In a stockpot over medium heat, brown the ground beef until fully cooked, breaking it apart with a wooden spoon.
- Sprinkle the taco seasoning over the beef and stir in the cream cheese until melted.
- Pour in the beef broth along with Rotel, corn, and chili beans; mix thoroughly.
- Allow to simmer for 25-30 minutes on medium heat, stirring occasionally and using a whisk if needed to blend in any remaining cream cheese chunks.
