Description

Ingredients

  • 1 ounce taco seasoning
  • 8 ounces cream cheese (cut into small blocks)
  • 4 cups beef broth
  • 10-ounce can Rotel
  • 15.25-ounce can corn (drained)
  • 15.5-ounce can chili beans
  • Optional toppings: tortilla chips, sour cream, shredded cheese, jalapenos, avocado

Instructions

  1. In a stockpot over medium heat, brown the ground beef until fully cooked, breaking it apart with a wooden spoon.
  2. Sprinkle the taco seasoning over the beef and stir in the cream cheese until melted.
  3. Pour in the beef broth along with Rotel, corn, and chili beans; mix thoroughly.
  4. Allow to simmer for 25-30 minutes on medium heat, stirring occasionally and using a whisk if needed to blend in any remaining cream cheese chunks.
  5. Serve hot in bowls with optional toppings on the side.
