Instructions
Step 1: Brown the Turkey Sausage
Heat olive oil in a large soup pot over medium heat.
Add turkey sausage and cook until browned, breaking it up into crumbles (about 5–6 minutes).
Transfer sausage to a plate and set aside.
Step 2: Sauté Aromatics
In the same pot, add diced onion and cook for 3–4 minutes until soft.

Step 3: Add Potatoes & Broth
Pour in the chicken broth and bring to a boil.
Add diced potatoes, reduce heat to medium-low, and simmer uncovered for 15–20 minutes, or until potatoes are fork-tender.
Step 4: Stir in Creaminess
Return the cooked sausage to the pot.
Stir in half-and-half and simmer for another 5 minutes.
Add chopped spinach and stir until wilted.
