Ingredients

Scale
  • 8 oz dry thin spaghetti or angel hair
  • 3 tablespoons butter
  • 3 cloves garlic, minced
  • 2/3 cup dry white grape juice
  • 2 cups chicken stock (low sodium preferred)
  • 1/2 cup half-and-half or heavy cream
  • 8 oz jar sun-dried tomatoes packed in oil (drained)
  • 1/2 cup freshly grated parmesan cheese
  • Zest and juice of 1 lemon
  • Fresh basil for garnish
  • Italian seasoning, salt, pepper, and optional red pepper flakes

Instructions

  1. In a large deep skillet over medium-low heat, melt butter and sauté minced garlic until fragrant (about 1 minute).
  2. Add dry white grape juice and simmer until reduced by half (3–5 minutes).
  3. Pour in chicken stock and half-and-half; add Italian seasoning and sun-dried tomatoes. Stir occasionally while bringing to a low boil.
  4. Add spaghetti or angel hair into the sauce; gently push into liquid without breaking strands.
  5. Cook pasta submerged in sauce until al dente (approximately 5 minutes), maintaining a gentle simmer.
  6. Remove from heat; stir in parmesan cheese until melted. Zest lemon over pasta and squeeze its juice in before topping with fresh basil.
