¼ tsp salt
For Topping:

Instructions
Step 1: Make the Caramel Base
-
In a saucepan, melt butter over medium heat.
-
Stir in brown sugar and honey.
-
Cook for 2–3 minutes until smooth and bubbly.
-
Pour into a greased 9×13-inch baking dish, spreading evenly over the bottom.
Step 2: Layer the Bread
-
Place cubed brioche or challah over the caramel layer in an even layer.
-
Lightly press down so the bread absorbs the caramel underneath.
Step 3: Whisk the Custard
-
In a mixing bowl, whisk together eggs, milk, cream, granulated sugar, vanilla, cinnamon, and salt.
-
Pour the mixture evenly over the bread cubes, pressing lightly to soak the bread.
Step 4: Chill Overnight
-
Cover the dish tightly with plastic wrap or foil.
-
Refrigerate for at least 4 hours or overnight for best results.
Step 5: Bake the Casserole
-
Preheat oven to 350°F (175°C).
-
Remove casserole from the fridge and bring to room temperature.
-
Bake uncovered for 45–55 minutes, until golden brown and set in the center.
-
Let it rest for 5–10 minutes before topping.
Step 6: Make the Brûlée Topping
-
Sprinkle 2 tbsp granulated sugar evenly over the top.
-
Use a kitchen torch to caramelize the sugar until golden and crisp.
-
Alternatively, broil on high for 1–2 minutes—watch closely to avoid burning.
Step 7: Serve & Garnish
-
Slice and serve warm.
-
Garnish with powdered sugar, berries, or a dollop of whipped cream.
-
Drizzle with maple syrup if desired.
Notes
Use Stale Bread – Day-old bread absorbs custard better without turning mushy.
Don’t Skip the Chill – Refrigerating overnight ensures rich flavor and texture.
Brûlée Carefully – A torch gives the best result, but broiling works in a pinch.
Customize It – Add berries, bananas, or chocolate chips to the casserole before baking.
Make It a Meal – Serve alongside savory dishes for a balanced brunch spread.
