Ingredients

Scale
  • 2 lbs little potatoes, halved
  • 1 cup + 2 tsp white vinegar
  • 1 tbsp salt
  • 2 tbsp butter
  • Freshly cracked black pepper
  • Flaked sea salt
  • Chopped chives (optional)

Instructions

  1. Boil the Potatoes: In a large pot, combine halved little potatoes with 1 cup of white vinegar and 1 tablespoon of salt. Fill with water to cover the potatoes by about 2 inches and bring to a boil.
  2. Simmer Until Tender: Once boiling, reduce heat to medium-low and let simmer for 20 minutes until fork-tender.
  3. Drain and Dry: Transfer cooked potatoes to a strainer to drain excess water; let rest for a couple of minutes to allow steam to escape.
  4. Frying Time: In a cast iron skillet, melt butter over medium-high heat. Add drained potatoes, season with black pepper and additional salt, then fry until golden brown and crispy on all sides.
  5. Final Touches: Transfer fried potatoes to a serving dish, drizzle with remaining vinegar, sprinkle with flaked sea salt, and garnish with chives if desired.
