  • 2 medium zucchinis, thinly sliced (about inch thick)

  • 2 tbsp olive oil

  • ½ cup breadcrumbs (panko or regular)

  • ¼ cup grated parmesan cheese

  • ½ tsp garlic powder

  • ½ tsp paprika

  • ½ tsp salt

  • ¼ tsp black pepper

Optional Add-ins:

  • Crushed red pepper flakes for a spicy kick

  • Italian seasoning for a herby flavor

  • Lemon zest for a bright twist


Instructions

Step 1: Preheat the Oven
Preheat your oven to 425°F (220°C).
Line two baking sheets with parchment paper or silicone mats.

Step 2: Slice the Zucchini
Slice the zucchinis into thin, even rounds about ⅛ inch thick.
Pat them dry with a paper towel to remove excess moisture.

Step 3: Coat the Zucchini
In a bowl, toss the zucchini slices with olive oil until evenly coated.
In another bowl, mix breadcrumbs, parmesan, garlic powder, paprika, salt, and pepper.

Step 4: Bread the Zucchini
Press each zucchini slice into the breadcrumb mixture, coating both sides.
Place the coated slices in a single layer on the prepared baking sheets.

Step 5: Bake
Bake for 20–25 minutes, flipping halfway through, until golden and crispy.
Watch closely toward the end to prevent burning.

Step 6: Serve
Let cool slightly and enjoy immediately with your favorite dipping sauce like ranch, marinara, or garlic aioli.
