1½ cups full-fat cottage cheese

½ cup all-purpose flour

½ cup breadcrumbs (panko or regular)

¼ cup grated Parmesan cheese

2 tbsp chopped fresh parsley or chives

¼ tsp black pepper

2–3 tbsp olive oil or neutral oil for frying

Instructions
Step 1: Make the Batter

In a large bowl, whisk together eggs and cottage cheese.

Stir in flour, breadcrumbs, Parmesan, herbs, garlic powder, pepper, and a pinch of salt.

Mix well until the batter holds together (it will be spoonable, not firm like dough).
Step 2: Heat the Pan
4. Heat 2 tbsp oil in a nonstick skillet over medium heat.
5. Once hot, drop spoonfuls of the batter into the pan, flattening slightly with the back of the spoon to form small patties.
Step 3: Fry Until Golden
6. Cook for 3–4 minutes per side, or until golden brown and crispy.
7. Remove from pan and place on paper towels to drain excess oil. Repeat with remaining batter, adding more oil as needed.
Step 4: Serve Hot
8. Serve warm with your choice of dip, fresh herbs, or a squeeze of lemon.
Notes
Drain Extra Liquid – If your cottage cheese is very wet, strain it slightly before mixing.
