Ingredients

Scale

For the Fish:

  • 4 white fish fillets (cod, tilapia, haddock, or halibut)

  • ½ cup grated Parmesan cheese

  • ½ cup panko breadcrumbs

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • ½ tsp paprika

  • ¼ tsp salt

  • ¼ tsp black pepper

  • 2 tbsp chopped fresh parsley (optional)

  • 2 tbsp olive oil or melted butter (for brushing or frying)

  • Lemon wedges, for serving

For Breading:

  • ¼ cup all-purpose flour

  • 2 eggs, beaten

Instructions

Step 1: Prep the Coating Station
Set up three shallow bowls:

  1. Flour (lightly seasoned with salt)

  2. Beaten eggs

  3. Parmesan, panko, garlic powder, onion powder, paprika, salt, and pepper mixed together

Step 2: Bread the Fish
Pat fish fillets dry with paper towels.
Dredge each fillet in flour, then dip in egg, then coat thoroughly in the Parmesan-panko mixture.
Press gently so the coating sticks well.

Step 3: Choose Your Cooking Method

To Bake:
Preheat oven to 425°F (220°C).
Place breaded fillets on a parchment-lined baking sheet.
Brush tops with olive oil or melted butter.
Bake for 12–15 minutes, or until golden and cooked through. Broil for 1–2 minutes at the end for extra crispness.

To Pan-Fry:
Heat 2–3 tbsp oil in a non-stick skillet over medium heat.
Cook fish 3–4 minutes per side, until golden and the fish flakes easily with a fork.
Transfer to a paper towel-lined plate.

Step 4: Garnish and Serve
Sprinkle with fresh parsley if desired.
Serve hot with lemon wedges and your favorite sides.

Notes

Use Fresh Fish – Pat dry to help the coating stick.
Panko = Extra Crunch – For a light, crispy texture.
Don’t Skip the Parmesan – Adds savory depth and browning.
Thin Fillets Cook Faster – Adjust time based on thickness.
Add Spice – Include a pinch of cayenne or chili flakes for heat.
