  • 1 tbsp vegetable oil
  • 1 ½ lbs boneless chuck roast, sliced
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, minced
  • ½ cup low-sodium soy sauce
  • 3 tbsp light brown sugar
  • 1 ½ cups matchstick carrots
  • 1 lb broccoli
  • 2 packages dry ramen (discard seasoning packets)
  • Toasted sesame seeds (for garnish)

Instructions

  1. Heat vegetable oil in a large sauté pan over medium-high heat. Brown half of the sliced beef for about 5-7 minutes, then transfer to a plate. Repeat with remaining beef.
  2. In a small bowl, whisk together garlic, ginger, soy sauce, and brown sugar.
  3. Add browned beef and carrots to the crock pot; pour sauce over everything.
  4. Cook on LOW for 5 hours. In the last 30 minutes, mix cornstarch with water and add along with broccoli and ramen.
  5. Stir well before serving and top with scallions and sesame seeds.
