  • 23 pounds chuck roast (diced into 1-inch pieces)
  • 2 tablespoons olive oil
  • ½ teaspoon black pepper
  • ½ tablespoon garlic powder
  • ½ tablespoon onion powder
  • 1 Au Jus gravy packet
  • ½ packet Lipton onion soup mix
  • 14.5 ounces beef broth
  • 10.5 ounces beefy mushroom soup
  • 1 tablespoon cornstarch

Instructions

  1. In a large mixing bowl, add diced chuck roast and season with olive oil, black pepper, garlic powder, and onion powder. Toss to coat.
  2. Heat olive oil in a skillet over medium-high heat. Sear the seasoned beef on all sides until golden brown, cooking in batches if necessary.
  3. In another bowl, whisk together beef broth, beefy mushroom soup, half of the Lipton onion soup mix, and Au Jus gravy packet until well combined.
  4. Transfer the seared meat to the crockpot and pour over the gravy mixture; stir to combine.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours. In the last few minutes of cooking, mix cornstarch with cold water until dissolved and add to the crockpot to thicken.
