  • 28 oz can crushed tomatoes
  • 15 oz can tomato sauce
  • 4 cups chicken broth
  • 1 cup freshly shaved parmesan cheese
  • 1 cup heavy whipping cream
  • 8 oz uncooked rotini pasta
  • 1/2 cup bread crumbs
  • 1 tablespoon butter
  • 1.5 cups shredded mozzarella

Instructions

  1. In a slow cooker, combine chicken breasts, garlic, crushed tomatoes, tomato sauce, salt, pepper, Italian seasoning, and chicken broth. Stir to mix.
  2. Cover and cook on low for 6-8 hours or high for 3-4 hours until chicken is tender.
  3. Shred the chicken directly in the crockpot using two forks. Stir in parmesan cheese, heavy cream, and uncooked rotini pasta. Cover and cook on low for an additional 30 minutes or high for 15 minutes until pasta is tender.
  4. In a sauté pan, melt butter over medium heat and toast the bread crumbs until golden brown.
  5. Serve soup in bowls topped with shredded mozzarella cheese and toasted bread crumbs.
