  • 4 garlic cloves (minced)
  • 1 green bell pepper (chopped)
  • 1/2 medium white onion (chopped)
  • 1 can crushed tomatoes (14.5 ounces)
  • 1/2 pound raw boneless, skinless chicken breast
  • 5 cups low sodium chicken broth
  • 1/2 cup shredded Parmesan cheese
  • 4 ounces uncooked dry gemelli or penne pasta
  • Chopped fresh basil or parsley (for garnish)

Instructions

  1. Prepare ingredients by mincing garlic and chopping bell pepper and onion.
  2. In a slow cooker, combine minced garlic, chopped bell pepper, chopped onion, crushed tomatoes, raw chicken breast, chicken broth, shredded Parmesan cheese, chopped basil, oregano, salt, black pepper, and red pepper flakes.
  3. Cook on low for 7.5 hours or high for 3.5 hours.
  4. Shred the cooked chicken and return it to the slow cooker along with the uncooked pasta.
  5. Cook on high for an additional 20-30 minutes until the pasta is al dente.
  6. If desired, stir in butter for creaminess and adjust consistency with additional broth if needed.
  7. Serve hot garnished with more Parmesan cheese and fresh herbs.
