- 4 cups Beef Broth
- 1/4 cup Panko Bread Crumbs
- 1 Egg
- 1/4 cup Whole Milk
- 1 Package Beefy Onion Soup Mix
- 2 Russet Potatoes (peeled and diced)
- 1 teaspoon Tomato Paste
- 1 teaspoon Soy Sauce
Instructions
- In a mixing bowl, combine breadcrumbs and whole milk until moistened. Add ground beef, yellow onion, egg, and beefy onion soup mix; mix thoroughly by hand.
- Roll the mixture into meatballs about 1–1½ inches in diameter.
- Sear meatballs in a hot skillet for about 1–2 minutes on each side until browned.
- In the crockpot, add beef broth, tomato paste, and soy sauce; stir until dissolved. Layer in seared meatballs followed by potatoes, carrots, and remaining onions.
- Cover and cook on low for 7–8 hours or high for 4–5 hours until everything is tender.
- For thicker gravy, whisk cornstarch with cold water and stir into the crockpot during the last 30 minutes of cooking.
