  • 2 lbs boneless, skinless chicken breasts or thighs

  • 2 cups salsa verde (store-bought or homemade)

  • 1 tsp ground cumin

  • 1 tsp garlic powder

  • ½ tsp onion powder

  • ½ tsp black pepper

  • ½ tsp salt (adjust to taste)

  • Optional: 1 tbsp lime juice (for extra brightness)

  • Optional: ½ cup chopped cilantro for garnish

Optional Toppings for Serving:

  • Sliced avocado

  • Diced tomatoes

  • Sour cream or Greek yogurt

  • Shredded cheese

  • Fresh lime wedges

  • Chopped green onions or red onions


Instructions

Step 1: Prepare the Chicken

  1. Place the chicken breasts or thighs in the bottom of your crockpot.

  2. Season with cumin, garlic powder, onion powder, salt, and black pepper.

Step 2: Add the Salsa Verde

  1. Pour the salsa verde over the seasoned chicken, making sure it’s mostly covered.

Step 3: Slow Cook to Tender Perfection

  1. Cover and cook on Low for 6-7 hours or High for 3-4 hours until the chicken is very tender and easy to shred.

Step 4: Shred the Chicken

  1. Remove the chicken from the crockpot and shred with two forks.

  2. Return the shredded chicken to the crockpot and stir it into the sauce.

  3. Add lime juice if using, and stir again.

Step 5: Serve and Garnish

  1. Serve the salsa verde chicken hot, topped with fresh cilantro if desired.

  2. Add to tacos, burrito bowls, salads, wraps, or enjoy it straight out of the bowl!

Use Thighs for Extra Juiciness – They stay super tender and flavorful.
