Ingredients

Scale

For the Breakfast Pie:

  • 4 large croissants, torn into bite-size pieces

  • 6 large eggs

  • ¾ cup whole milk

  • ½ cup heavy cream

  • 1 cup shredded cheddar cheese

  • ½ cup shredded mozzarella or Swiss cheese

  • 1 cup cooked, diced chicken or turkey sausage (optional)

  • ½ cup sautéed spinach or mushrooms (optional)

  • ½ tsp garlic powder

  • ½ tsp salt

  • ¼ tsp black pepper

Optional Toppings:

  • Chopped fresh parsley or chives

  • Hot sauce or red pepper flakes

  • A sprinkle of Parmesan

Instructions

Step 1: Preheat Oven
Preheat your oven to 350°F (175°C).
Grease a pie dish with butter or nonstick spray.

Step 2: Prepare the Croissants
Tear croissants into large chunks and spread evenly in the prepared dish.
Use day-old croissants for best texture—they absorb the custard perfectly.

Step 3: Cook Optional Fillings
If using sausage, chicken, or veggies, cook them now and let them cool slightly.
Distribute evenly over the croissants.

Step 4: Mix the Egg Custard
In a large bowl, whisk together eggs, milk, cream, garlic powder, salt, and pepper.
Stir in shredded cheddar and mozzarella cheese.

Step 5: Assemble the Pie
Pour the egg mixture over the croissants and fillings.
Press down gently to help the croissants soak up the custard.
Let sit for 10–15 minutes before baking (or cover and refrigerate overnight).

Step 6: Bake
Bake for 35–40 minutes, or until the top is golden and the center is set.
If the top browns too quickly, cover loosely with foil.
A knife inserted in the center should come out clean.

Step 7: Cool & Serve
Let the pie rest for 5–10 minutes before slicing.
Garnish with parsley, chives, or red pepper flakes as desired.

Notes

Use Day-Old Croissants – They absorb custard better than fresh.
Press Gently – Helps soak up the egg mixture for a uniform texture.
Don’t Overbake – Custard should be just set, not rubbery.
Get Creative – Try bacon, sun-dried tomatoes, peppers, or herbs.
Make It Ahead – Assemble the night before and bake fresh in the morning.
