Ingredients

Scale
  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese (or any cheese you like)
  • ½ cup finely chopped dill pickles (about 34 pickles)
  • 2 tablespoons pickle juice (from the pickle jar)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon dried dill (optional, for extra dill flavor)
  • 1 cup crushed pretzels or chopped nuts (like pecans or almonds) for rolling (optional)

Instructions

Step 1: Mix the Cheese Filling
In a large bowl, combine the softened cream cheese, shredded cheddar cheese, chopped dill pickles, pickle juice, garlic powder, onion powder, and dried dill (if using). Mix everything together until well combined.

Step 2: Form the Cheese Balls
Using your hands, scoop out small portions of the cheese mixture and roll them into balls, about 1-inch in diameter. If the mixture is too sticky, you can lightly grease your hands or chill the mixture for 10-15 minutes before rolling.

Step 3: Coat the Cheese Balls (Optional)
For extra crunch and flavor, roll each cheese ball in crushed pretzels or chopped nuts. This adds a nice contrast to the creamy cheese inside.

Step 4: Chill
Place the cheese balls on a plate or tray and refrigerate for at least 1 hour to allow the flavors to meld and the cheese balls to firm up.

Step 5: Serve & Enjoy!
Serve chilled with crackers, chips, or fresh veggies for dipping!

Notes

  • Adjust the Flavor: Feel free to adjust the amount of pickle juice and dill pickles depending on how tangy you want the cheese balls.
  • Make Ahead: These cheese balls can be made up to 2 days in advance. Just store them in an airtight container in the fridge.
  • Try Different Coatings: For a fun twist, you can roll the cheese balls in finely chopped fresh herbs, bacon bits, or crushed crackers instead of pretzels or nuts.
