Ingredients
- 1 baguette, sliced into 1” rounds
- 2 tablespoons olive oil
- 1 1/2 cups whole milk ricotta cheese
- 1 tablespoon dill pickle brine
- 2 garlic cloves, minced
- 2 teaspoons fresh dill, chopped
- Juice of 1 lemon
- 5 dill pickles, sliced into 1/2" rounds
- Kosher salt and freshly cracked black pepper
Instructions
- Preheat your oven to 350°F and line a baking sheet with parchment paper.
- In a mixing bowl, whisk together the ricotta, dill pickle brine, minced garlic, chopped dill, and lemon juice. Season with kosher salt to taste and refrigerate until ready.
- Place baguette slices on the baking sheet, drizzle with olive oil, sprinkle salt and pepper, then bake for 8-10 minutes until golden.
- Once baked, top each slice with the ricotta mixture and two slices of dill pickle. Finish with additional black pepper.
- Garnish with more fresh dill and serve warm or at room temperature.
