3 cups cooked chicken breast, shredded (rotisserie or leftover chicken works great)
1 box (6 oz) seasoned stuffing mix
1 can (10.5 oz) cream of chicken soup
1 can (10.5 oz) cream of mushroom soup (or cream of celery)
½ cup sour cream
1 cup chicken broth (low sodium preferred)
1 small onion, finely chopped
1 cup frozen mixed vegetables (optional)
½ tsp garlic powder
½ tsp onion powder
Salt and black pepper, to taste
2 tbsp unsalted butter, melted
Fresh parsley, chopped (optional, for garnish)


Instructions

Step 1: Preheat and Prep

  1. Preheat your oven to 375°F (190°C).

  2. Lightly grease a 9×13-inch baking dish with non-stick spray or butter.

Step 2: Mix the Creamy Chicken Filling

  1. In a large mixing bowl, combine shredded chicken, cream of chicken soup, cream of mushroom soup, sour cream, chopped onion, garlic powder, onion powder, and black pepper.

  2. If using frozen mixed vegetables, add them now.

  3. Stir everything together until well mixed and creamy.

Step 3: Prepare the Stuffing Topping

  1. In a separate bowl, add the stuffing mix.

  2. Pour in the chicken broth and melted butter.
