Ingredients

1 (10 oz) bag nacho cheese Doritos, lightly crushed

3 cups cooked shredded chicken (rotisserie or leftover)

1 (10.5 oz) can cream of chicken soup

1 (10 oz) can Rotel (diced tomatoes with green chilies), drained

1 cup sour cream

1 tsp garlic powder
-
1 tsp onion powder
-
1 tsp taco seasoning

Salt and pepper, to taste

2 cups shredded cheddar cheese (or a blend of cheddar and Monterey Jack)

Optional toppings: chopped green onions, diced tomatoes, sliced black olives, jalapeños, chopped cilantro
Instructions
Step 1: Preheat the Oven

Preheat your oven to 350°F (175°C).

Lightly grease a 9×13-inch baking dish.
Step 2: Make the Chicken Filling

In a large bowl, mix together shredded chicken, cream of chicken soup, Rotel, sour cream, garlic powder, onion powder, taco seasoning, salt, and pepper.

Stir in 1 cup of shredded cheese until evenly combined.
Step 3: Layer the Casserole

Spread a layer of crushed Doritos (about 1/3 of the bag) on the bottom of the prepared dish.

Add half of the chicken mixture and spread evenly.

Add another 1/3 of the Doritos and the remaining chicken mixture.

Top with the remaining crushed Doritos and sprinkle the remaining 1 cup of shredded cheese over the top.
Step 4: Bake

Cover with foil and bake for 20 minutes.

Remove foil and bake uncovered for another 10–15 minutes, until hot and bubbly and cheese is melted.
Step 5: Garnish and Serve

Let the casserole rest for 5 minutes before serving.

Garnish with your favorite toppings like green onions, tomatoes, olives, or jalapeños.
