  • 4 large baking potatoes
  • 1 pound lean ground beef
  • 1 small onion (chopped)
  • 1 packet taco seasoning
  • 1/4 cup water
  • 1/2 cup sour cream (plus extra for serving)
  • 1/4 cup milk
  • 1 cup shredded cheddar cheese
  • 2 green onions (sliced)
  • 1/2 cup salsa

Instructions

  1. Preheat the oven to 475°F. Scrub potatoes and prick them several times with a fork.
  2. Bake the potatoes directly on a baking sheet for 60 to 75 minutes until soft.
  3. In a nonstick pan over medium heat, cook ground beef and chopped onion until browned.
  4. Add taco seasoning and water; stir for about 1 minute before removing from heat.
  5. After cooling baked potatoes slightly, cut off the tops and scoop out most of the pulp into a mixing bowl.
  6. Mash the potato pulp with sour cream and milk, then mix in three-quarters of the beef mixture and three-quarters of the cheese.
  7. Stuff each potato skin with the mixture, top with remaining cheese, and bake at 350°F for another 20-25 minutes.
  8. Serve garnished with green onions, salsa, and additional sour cream.
