  • 1 cup cottage cheese
  • 4 large eggs
  • ½ cup rolled oats (blended into oat flour)
  • 23 tablespoons maple syrup
  • 1 scoop vanilla protein powder
  • 1 teaspoon lemon juice
  • 1 teaspoon vanilla extract
  • ½ teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1 cup blueberries

Instructions

  1. Preheat your oven to 350°F and lightly grease an 8×8” baking dish.
  2. Blend the rolled oats into fine oat flour in a blender or food processor.
  3. In a large mixing bowl or blender, combine cottage cheese, eggs, maple syrup, vanilla extract, lemon juice, and protein powder until smooth.
  4. Mix in the oat flour, cinnamon, baking powder, and salt until fully combined.
  5. Gently fold in the blueberries.
  6. Pour the batter into the greased baking dish evenly.
  7. Bake for 35–40 minutes until golden brown around the edges and set in the center.
  8. Allow to cool slightly before slicing into squares.
