Ingredients
- 1 cup cottage cheese
- 4 large eggs
- ½ cup rolled oats (blended into oat flour)
- 2–3 tablespoons maple syrup
- 1 scoop vanilla protein powder
- 1 teaspoon lemon juice
- 1 teaspoon vanilla extract
- ½ teaspoon cinnamon
- 1 teaspoon baking powder
- 1 cup blueberries
Instructions
- Preheat your oven to 350°F and lightly grease an 8×8” baking dish.
- Blend the rolled oats into fine oat flour in a blender or food processor.
- In a large mixing bowl or blender, combine cottage cheese, eggs, maple syrup, vanilla extract, lemon juice, and protein powder until smooth.
- Mix in the oat flour, cinnamon, baking powder, and salt until fully combined.
