  • 1 tablespoon olive oil
  • 1 cup diced onion
  • 1 cup shredded carrot
  • 1 cup diced celery
  • 1 pound lean ground beef
  • 1 tablespoon Italian seasoning
  • ½ teaspoon dried garlic powder
  • salt & pepper to taste
  • 1 (15-oz) can tomato sauce
  • 1 (15-oz) can diced tomatoes (NOT drained)
  • 2 (16-oz) packages gnocchi
  • ½ cup grated parmesan cheese
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat your oven to 400°F (200°C) and grease a 9×13 inch casserole dish.
  2. In a large skillet, heat olive oil over medium heat. Sauté diced onion, shredded carrot, and diced celery until softened (about 4–5 minutes).
  3. Add lean ground beef, Italian seasoning, garlic powder, salt, and pepper to the skillet. Cook until the beef is browned and crumbly.
  4. Stir in tomato sauce, diced tomatoes (with juices), and gnocchi until well combined. Transfer the mixture to the prepared casserole dish.
  5. Top with grated parmesan and shredded mozzarella cheese.
  6. Bake for 25–30 minutes or until bubbly and golden brown on top. Let sit for 5 minutes before serving.
