- 1 tablespoon olive oil
- 1 cup diced onion
- 1 cup shredded carrot
- 1 cup diced celery
- 1 pound lean ground beef
- 1 tablespoon Italian seasoning
- ½ teaspoon dried garlic powder

- 1 (15-oz) can tomato sauce
- 1 (15-oz) can diced tomatoes (NOT drained)
- 2 (16-oz) packages gnocchi
- ½ cup grated parmesan cheese
- 1 cup shredded mozzarella cheese
Instructions
- Preheat your oven to 400°F (200°C) and grease a 9×13 inch casserole dish.
- In a large skillet, heat olive oil over medium heat. Sauté diced onion, shredded carrot, and diced celery until softened (about 4–5 minutes).
- Add lean ground beef, Italian seasoning, garlic powder, salt, and pepper to the skillet. Cook until the beef is browned and crumbly.
- Stir in tomato sauce, diced tomatoes (with juices), and gnocchi until well combined. Transfer the mixture to the prepared casserole dish.
- Top with grated parmesan and shredded mozzarella cheese.
- Bake for 25–30 minutes or until bubbly and golden brown on top. Let sit for 5 minutes before serving.
