  • 1 tbsp butter
  • 1 lb gnocchi
  • 1 lb lean ground beef
  • 1 large white onion (diced)
  • 4 tsp minced garlic
  • 1 cup beef broth
  • 10 oz can diced tomatoes with green chiles
  • 1/3 cup cream
  • 1.5 cups shredded sharp cheddar cheese
  • Seasonings: salt, pepper, cumin, smoked paprika, yellow mustard

Instructions

  1. In a large skillet over medium heat, melt the butter and toast the uncooked gnocchi for about 2 minutes until lightly browned. Remove and set aside.
  2. Increase heat to medium-high; add ground beef and onion. Season with salt and pepper. Stir in cumin, smoked paprika, mustard, and garlic until combined. Cook until beef is fully cooked.
  3. Add diced tomatoes, beef broth, and toasted gnocchi to the skillet. Bring to a boil then reduce heat to simmer for 5–7 minutes.
  4. Stir in cream and three-quarters of the cheese until melted. Top with remaining cheese and half of the green onions; broil until golden brown.
  5. Serve hot, garnished with remaining green onions.
